Being fall in New England, there always seems to be a pile of apples on the counter. I didn’t have the heart on a Monday night to make a baked good (and all the associated dishes!) so I searched for crockpot oatmeal recipes.
Lo and behold, I stumbled upon the blog FiveHeart Home. Samantha had this amazing recipe for Overnight Slow Cooker Apple Pie Steel Cut Oatmeal {with a secret trick for no burnt edges!}.
Slow cooked steel cut oats, apples, maple syrup, milk, and spices are so satisfying on a cold morning.
Her tip probably saved me from a lot of dish soap and scrubbing. Not only do you get to use the slow cooker instead of creating a *million* dirty bowls, measuring spoons, and spatulas, her trick saves your oatmeal too!
Pour water into the crockpot (maybe a 1/3 of the way) and place your baking dish filled with your oatmeal mix into the water. Don’t worry about getting the exact water…I did have to pour some out since the water was nearly overflowing when I started.
Just like she advised, I used a 2 1/2 quart Corning Ware baking dish (affiliate link) and a 6.5-quart slow cooker and they worked perfectly.
The only catch was…the recipe called for apple juice but we didn’t have any. So I substituted Chai Tea in the same amount. It was delicious!
I always feel like oatmeal so either be super creamy or have some crunch in it. I didn’t have any walnuts on hand so I chopped up a banana, giving it just the extra bit of creaminess to pull it together.
